This dataset records the experimental and predicted drying kinetics of 2.5 mm strawberry slices subjected to forced-convection solar drying in Biskra, Algeria. The data compare drying performance across three airflow power levels (40, 70, and 100%) over a 7.5-hour period (08:30 to 16:00).
