This book was served initially as one of several "white papers" to guide the orientation of Michigan State's new Global Center for Food Systems Innovation. The book is built around the concept and empirical elaboration of three of the five food system transformations first developed by Reardon (2013) that were occurring in developing countries’ agrifood systems: (1) urbanization paired with income growth, (2) their impact on the transformation of diets, and (3) resulting transformations in the “downstream” (retail) and “midstream” portions of the food system.
