This dataset presents grain and leaf nutritional and antinutritional trait data for 40 diverse cowpea (Vigna unguiculata (L.) Walp.) genotypes evaluated in a randomized complete block design with three replications at Sokoine University of Agriculture, Morogoro, Tanzania. Grain traits measured include protein, iron, zinc, and phytate content; leaf traits include β-carotene, vitamin C, iron, zinc, and phytate content. Data were generated using standard laboratory analytical methods (e.g., Kjeldahl nitrogen determination, atomic absorption spectrophotometry, spectrophotometric phytate and β-carotene assays) and were used to assess genotypic variation, trait correlations, and multivariate patterns (principal component and hierarchical cluster analysis) among grain and leaf nutritional and antinutritional traits. The dataset supports research on identifying nutritionally superior and complementary cowpea genotypes for biofortification breeding, aimed at improving micronutrient deficiency outcomes in sub-Saharan Africa. Genotype identifiers, replicate-level measurements, and trait values used in the associated manuscript are included.
