Bioactive Metabolites in Ethiopian Fermented Foods: A Scoping Review

This scoping review comprehensively surveys and maps the existing literature on the health-promoting, microbially produced chemical compounds found within traditional Ethiopian foods and beverages. By synthesizing current scientific knowledge, the paper illustrates how indigenous products that come from traditional fermentation contribute to human nutrition and therapeutic health. Ultimately, it highlights critical gaps in the current research landscape and establishes a clear roadmap for future research needed to advance the field.
