D4.1 –Pilot dataset from business case studies on microbiome and mycotoxin occurrence of fermented foods

Deliverable 4.1 “Pilot dataset from business case studies on microbiome and mycotoxin occurrence of fermented foods” reports the dataset generated within WP4 focusing on the characterization of microbiota and the potential to reduce the mycotoxin level in African fermented products. The deliverable includes a preliminary dataset to fill with new data and share, for studying the microbiome and relationships with mycotoxin reduction in at least three food models (1 milk-based (maziwa mala) and 2 cereal-based). The deliverable is the first result derived from task 4.1, focusing on the evaluation of the mycotoxin level in correspondence to the fermentation step, to reveal the microbiota hosting potential microbial candidates able to affect the mycotoxin content in the final product.
