Hyperspectral imaging spectra of cocoa beans

Spectra of fermented and dried cocoa beans obtained by hyperspectral imaging. Cocoa are from Criollo, Forastero and Trinitario varieties and were collected in the Republic of Congo in to different regions in 2022 (in Niari in the South and in Sangha in the North). The measurements were realized with the HSI system Pika L (Resonon, Bozeman, MT, USA) composed by a camera, with a focal lens (Xenoplan 1.4/23, Scheneider-Kreuznach, Bad Kreuznach, Germany); a light source of four MR16 35W quartz tungsten (QTH) halogen lamps fixed at 45°; a halogen lamp switch; a moving stage (PS-12-20-1.0, Servo Systems Co, Rockaway, NJ, USA); a motor (MDX-J-SA-17, Arcus Technology Inc, Livermore, CA, USA); and a computer to control and operate the system. The two hundred whole cocoa beans of each (variety x region) were analyzed individually, placed on a mobile black platinum stage and scanned by the camera. The camera was located 450 mm from the plate containing the beans. The beans were scanned on both sides using SpectrononPRO software (Resonon, Bozeman, MT, USA) to acquire the images and the reflectance spectra (in the range from 400 nm to 1000 nm). Scanning was carried out in total darkness. The average spectra were then calculated for each bean.
