This database contains 1312 NIR spectra of fresh mashed banana samples acquired in NaCRRI (Uganda) by using FOSS DS2500 NIR spectrometer. Banana bunches are harvested at the green-mature stage: when the finger angles are filled but before the fingers start ripening. Each bunch is labeled by genotype and bunch number. Cluster 2 of each bunch is used for acquiring the NIRS on the harvesting day, according to the protocol described in the SOP. Four random fingers of cluster 2 are selected and divided into two equal halves, giving a total of eight halves. Four of the 8 halves are first used for texture analysis using a TA.XT (Stable Micro Systems) texture analizer. The same samples are then mashed using a mottle and a pestle and used for NIRS acquisition. The remaining samples are used to estimate dry matter content, using an oven on 50 g of fresh matter. Cluster 3 of the same bunch is used for colour analysis using a chromameter (CR-400). This dataset combines NIRS spectra, texture and colour.
