In the Tunisian context, and during the SARS_COV19 pandemic, the authors proposed to the Hospital Centers of the Ministry of Health in Tunisia as well as the Institut of Pasteur a set of e-health projects based on artificial intelligence. During the IT development process, they had many problems related to the processing of health data: insufficiency and lack of health data for the development of innovative and intelligent applications, the health system having no digitalization, the need for law application of personal health data even in the context of scientific research. Moreover, the risk of data leaks, non-compliance with the law and cyber attacks are increased by a greater use of personal devices, a common circulation of data, and sensitive computer systems that are becoming more accessible outside hospitals' networks. In this chapter, the authors present the process that has been applied to guarantee the protection of personal health data through three different projects and explain the steps for this process implementation.
