À Dakar, l'agriculture urbaine assure 70 % de la demande en légumes et fruits de la région et son apport dans l'assainissement et le cadre de vie est largement documenté. Malgré cette multifonctionnalité, elle doit faire face à des contraintes majeures, qui, si rien n'est fait, pourrait aboutir à sa disparition dans un avenir proche. Pour y remédier, cette thèse a pour objectif d'analyser les dimensions santé de l'AU dans la région de Dakar dans l'optique d'un plaidoyer pour la construction d'une politique d'AU dans ce territoire. Cette thèse est ainsi fondée sur une approche pluridisciplinaire et participative en combinant des enquêtes qualitatives, des enquêtes quantitatives et un recours à l'analyse spatiale. Grâce à un diagnostic territorial de l'AU, cette thèse valide la pertinence de s'appuyer sur la santé en général, et dans sa possible déclinaison instrumentale par l'ÉIS en particulier, pour introduire une approche qui tient compte de la santé dans toutes les politiques publiques particulièrement dans le contexte des pays du Sud. In Dakar, urban agriculture provides 70 % of the region's demand for vegetables and fruit and its contribution to sanitation and the living environment is well documented. Despite this multifunctionality, it faces major constraints which, if left unchecked, could lead to its disappearance in the near future. To remedy this situation, the aim of this thesis is to analyse the health dimensions of UA in the Dakar region with a view to advocating for the construction of a UA policy in this territory. This thesis is thus based on a multidisciplinary and participatory approach combining qualitative and quantitative surveys and the use of spatial analysis. Thanks to a territorial diagnosis of UA, this thesis validates the relevance of relying on health in general, and in its possible instrumental declination through HIA in particular, to introduce an approach that takes health into account in all public policies, particularly in the context of countries in the South.
